Abstract

Sucrose synthases catalyse the synthesis of sucrose 2.4.1.13 in the following reaction: UDP-glucose + D-fructose = UDP + sucrose This family includes the bulk of the sucrose synthaseprotein. However the carboxyl terminal region of thesucrose synthases belongs to the glycosyl transferasefamily IPR001296 . This enzyme is found mainly in plantsbut also appears in bacteria.
